Low Carb Taco Casserole

Low carb taco casserole with beef, cheese, and creamy layers. Easy healthy dinner recipe.

Ingredients
  

  • 1 lb ground beef
  • 1 packet taco seasoning or 2 tablespoons
  • 4 oz cream cheese softened
  • ½ cup sour cream
  • 2 cups shredded cheddar or Mexican blend cheese
  • 1 cup salsa
  • 2 large eggs
  • ½ cup onion chopped
  • 2 cloves garlic minced
  • ½ teaspoon salt
  • ¼ teaspoon black pepper

Instructions
 

  • Preheat oven to 375°F and grease a baking dish.
  • Cook ground beef in a skillet until browned.
  • Add onion and cook until softened, then add garlic.
  • Stir in taco seasoning and a little water and simmer until thickened.
  • In a bowl, mix cream cheese, sour cream, eggs, salt, and pepper until smooth.
  • Spread beef mixture in the baking dish.
  • Pour creamy mixture over beef and spread evenly.
  • Top with cheese and salsa.
  • Bake for 25 to 30 minutes until set and bubbly.
  • Cool slightly before serving.

Notes

Use room temperature cream cheese for smooth texture.
Let casserole rest before serving.
Customize with toppings if desired.
