Ingredients
  

  • 1 pound Italian sausage
  • 1 tablespoon olive oil
  • ½ cup diced yellow onion
  • 2 cloves garlic minced
  • cups pumpkin purée
  • 3 cups chicken broth
  • 1 cup heavy cream
  • ½ teaspoon ground sage
  • ½ teaspoon ground thyme
  • ¾ teaspoon salt
  • ½ teaspoon black pepper
  • 2 cups baby spinach

Instructions
 

  • Brown sausage. Add onion and garlic. Stir in pumpkin, broth, and cream. Season and simmer. Add spinach and serve hot.
