Loaded Potato & Meatloaf Casserole

Loaded potato & meatloaf casserole made with juicy meatloaf, creamy mashed potatoes, cheddar cheese, and bacon. A hearty comfort food dinner.

Ingredients
  

  • 1 ½ pounds ground beef
  • 1 cup breadcrumbs
  • ½ cup milk
  • 2 large eggs
  • ½ cup onion finely diced
  • 1 teaspoon garlic powder
  • 1 ½ teaspoons salt
  • ½ teaspoon black pepper
  • cup ketchup
  • 4 cups prepared mashed potatoes
  • 2 tablespoons butter
  • ¼ cup sour cream
  • 1 ½ cups shredded cheddar cheese
  • ½ cup cooked bacon crumbled
  • ¼ cup green onions sliced

Instructions
 

  • Preheat oven to 375°F and grease a 9×13-inch baking dish.
  • In a large bowl, mix ground beef, breadcrumbs, milk, eggs, onion, garlic powder, salt, pepper, and ketchup until just combined.
  • Press meatloaf mixture evenly into the baking dish.
  • Bake for 25 minutes, then remove and drain excess grease.
  • Stir butter and sour cream into mashed potatoes until smooth.
  • Spread mashed potatoes evenly over the meatloaf layer.
  • Top with shredded cheddar cheese and crumbled bacon.
  • Return to oven and bake for 20–25 minutes until cheese is melted and bubbly.
  • Optional: Broil for 2–3 minutes for a golden top.
  • Remove from oven, sprinkle with green onions, and rest 10 minutes before serving.

Notes

Notes:
Use thick mashed potatoes so the layers hold well. Let the casserole rest before slicing for clean portions.
