Light Pesto Pasta with Chicken

Light pesto pasta with chicken, fresh basil flavor, and simple ingredients. Easy dinner recipe.

Ingredients
  

  • 12 oz pasta
  • 2 large chicken breasts sliced
  • ½ cup pesto sauce
  • 2 tablespoons olive oil
  • 2 cloves garlic minced
  • 1 cup cherry tomatoes halved
  • ½ cup grated Parmesan cheese
  • ½ teaspoon salt
  • ¼ teaspoon black pepper

Instructions
 

  • Cook pasta until al dente and reserve some pasta water.
  • Heat olive oil and cook seasoned chicken until done.
  • Remove chicken and sauté garlic and tomatoes.
  • Return chicken to skillet.
  • Add pasta and pesto sauce.
  • Toss together, adding pasta water if needed.
  • Top with Parmesan cheese and serve.

Notes

Use pasta water to adjust sauce consistency.
Do not overcook chicken.
Customize with additional vegetables.
