Lemon Ricotta Pasta with Spinach

Lemon Ricotta Pasta with Spinach Recipe with creamy ricotta, fresh lemon, and tender pasta.

Ingredients
  

  • 12 oz pasta spaghetti or penne
  • 1 cup ricotta cheese
  • 3 cups fresh spinach
  • 2 tbsp olive oil
  • 3 cloves garlic minced
  • 2 tbsp lemon juice
  • 1 tsp lemon zest
  • 1 tsp salt
  • ½ tsp black pepper
  • ½ cup grated Parmesan cheese
  • ¼ tsp red pepper flakes
  • 2 tbsp chopped fresh basil
  • 1 cup grilled chicken or shrimp

Instructions
 

  • Cook pasta according to package directions and reserve 1/2 cup pasta water.
  • Heat olive oil in a skillet and cook garlic until fragrant.
  • Add spinach and cook until wilted.
  • Reduce heat and stir in ricotta, lemon juice, and zest.
  • Add pasta and mix well, adding reserved pasta water as needed.
  • Season with salt, pepper, and Parmesan cheese.
  • Add optional ingredients and toss gently.
  • Serve warm.

Notes

Use fresh lemon juice for best flavor.
Keep heat low when adding ricotta.
Add pasta water gradually for smooth sauce.
