Instructions
Cook pasta according to package directions and reserve 1/2 cup pasta water.
Heat olive oil in a skillet and cook garlic until fragrant.
Add spinach and cook until wilted.
Reduce heat and stir in ricotta, lemon juice, and zest.
Add pasta and mix well, adding reserved pasta water as needed.
Season with salt, pepper, and Parmesan cheese.
Add optional ingredients and toss gently.
Serve warm.
Notes
Use fresh lemon juice for best flavor.
Keep heat low when adding ricotta.
Add pasta water gradually for smooth sauce.
