milk or buttermilk

vegetable oil or melted butter

lemon juice

lemon zest

rhubarb
chopped

powdered sugar

–3 tablespoons lemon juice
for glaze
Instructions
Preheat oven to 350°F and grease a loaf pan.
Whisk flour, baking powder, and salt.
Mix sugar, eggs, milk, oil, lemon juice, and zest.
Combine wet and dry ingredients.
Fold in rhubarb.
Pour into pan and bake 50 to 60 minutes.
Cool completely.
Mix powdered sugar and lemon juice.
Drizzle glaze over loaf and serve.
Notes
Do not overmix batter.
Use fresh lemon juice for best flavor.
Let loaf cool before glazing.
