Lemon Rhubarb Loaf with Glaze

Ingredients
  

  • 2 cups all-purpose flour
  • 1 ½ teaspoons baking powder
  • ½ teaspoon salt
  • 1 cup granulated sugar
  • 2 large eggs
  • ½ cup milk or buttermilk
  • ½ cup vegetable oil or melted butter
  • 2 tablespoons lemon juice
  • 1 tablespoon lemon zest
  • 1 ½ cups rhubarb chopped
  • 1 cup powdered sugar
  • 2 –3 tablespoons lemon juice for glaze

Instructions
 

  • Preheat oven to 350°F and grease a loaf pan.
  • Whisk flour, baking powder, and salt.
  • Mix sugar, eggs, milk, oil, lemon juice, and zest.
  • Combine wet and dry ingredients.
  • Fold in rhubarb.
  • Pour into pan and bake 50 to 60 minutes.
  • Cool completely.
  • Mix powdered sugar and lemon juice.
  • Drizzle glaze over loaf and serve.

Notes

Do not overmix batter.
Use fresh lemon juice for best flavor.
Let loaf cool before glazing.
