Lemon Italian Ice Protein Gummies

Ingredients
  

  • 2 cups water
  • 2 tablespoons unflavored gelatin
  • ¼ cup lemon juice
  • 1 teaspoon lemon zest
  • 1 scoop protein powder
  • 2 –3 tablespoons honey or sweetener

Instructions
 

  • Pour 1 cup cold water into a bowl and sprinkle gelatin on top.
  • Let bloom for 5 minutes.
  • Heat remaining water and dissolve gelatin completely.
  • Remove from heat and mix in lemon juice, zest, protein powder, and sweetener.
  • Whisk until smooth.
  • Pour into molds or dish.
  • Refrigerate for 2 to 3 hours until firm.
  • Cut into pieces and serve.

Notes

Do not boil gelatin.
Whisk protein powder well to avoid clumps.
Store in refrigerator for freshness.
