Ingredients

unsalted butter
softened

granulated sugar

vanilla extract

baking powder

lemon curd
Powdered sugar for dusting
Instructions
Preheat oven to 350°F and grease a mini muffin pan.
Cream butter and sugar together until smooth.
Add egg and vanilla extract, mixing until combined.
In a separate bowl, mix flour, baking powder, and salt.
Gradually add dry ingredients to wet mixture to form a dough.
Roll dough into small balls and place in muffin pan.
Press centers to form cup shapes and create petal edges if desired.
Bake for 10–12 minutes until lightly golden.
Remove from oven and reshape centers if needed.
Cool completely, then fill with lemon curd.
Dust with powdered sugar before serving.
Notes
Do not overbake to keep cookies soft.
Fill with lemon curd just before serving.
Chill dough if too soft for shaping.
