Lemon Curd Daisy Cookie Cups

Lemon Curd Daisy Cookie Cups Recipe with buttery cookie base and bright lemon curd filling.

Ingredients
  

  • 1 ½ cups all-purpose flour
  • ½ cup unsalted butter softened
  • ½ cup granulated sugar
  • 1 egg
  • 1 tsp vanilla extract
  • ½ tsp baking powder
  • ¼ tsp salt
  • ½ cup lemon curd
  • Powdered sugar for dusting

Instructions
 

  • Preheat oven to 350°F and grease a mini muffin pan.
  • Cream butter and sugar together until smooth.
  • Add egg and vanilla extract, mixing until combined.
  • In a separate bowl, mix flour, baking powder, and salt.
  • Gradually add dry ingredients to wet mixture to form a dough.
  • Roll dough into small balls and place in muffin pan.
  • Press centers to form cup shapes and create petal edges if desired.
  • Bake for 10–12 minutes until lightly golden.
  • Remove from oven and reshape centers if needed.
  • Cool completely, then fill with lemon curd.
  • Dust with powdered sugar before serving.

Notes

Do not overbake to keep cookies soft.
Fill with lemon curd just before serving.
Chill dough if too soft for shaping.
