Keto Crispy Reuben Roll-Ups

Low-carb crispy Reuben roll-ups made with melted Swiss cheese, corned beef, and sauerkraut. Perfect keto snack or appetizer.

Ingredients
  

  • 12 slices Swiss cheese
  • 12 ounces deli corned beef
  • 1 cup sauerkraut drained very well
  • ¼ cup Thousand Island dressing keto-friendly if needed
  • 1 tablespoon Dijon mustard

Instructions
 

  • Preheat oven to 400°F and line a baking sheet with parchment paper. Arrange two slices of Swiss cheese slightly overlapping to form a rectangle. Repeat to create six rectangles. Bake for 5–7 minutes until cheese melts and edges begin to turn golden. Remove from oven and allow to cool for 1–2 minutes until flexible. Place slices of corned beef over each cheese rectangle. Top with a small amount of well-drained sauerkraut. Drizzle with Thousand Island dressing and Dijon mustard. Roll each cheese rectangle tightly into a roll-up. Return to oven for 3–5 minutes until crisp and golden. Serve warm.

Notes

Do not overbake cheese during the first bake or it may become too brittle to roll. Drain sauerkraut thoroughly to prevent sogginess. Store leftovers in the refrigerator for up to 3 days and reheat in the oven at 350°F to restore crispness.
