Kentucky Butter Cake Cookies

Kentucky Butter Cake Cookies with soft, cake-like texture and buttery vanilla glaze.

Ingredients
  

  • 1 cup unsalted butter softened
  • ¾ cup granulated sugar
  • ¼ cup brown sugar
  • 2 large eggs
  • 1 tablespoon vanilla extract
  • 2 ½ cups all-purpose flour
  • 2 teaspoons baking powder
  • ½ teaspoon salt
  • Butter Glaze
  • ¼ cup unsalted butter
  • ½ cup granulated sugar
  • 2 tablespoons water
  • 1 teaspoon vanilla extract

Instructions
 

  • Preheat oven to 350°F. Cream butter and sugars until fluffy. Add eggs and vanilla. Mix dry ingredients separately, then combine gently. Scoop dough and bake 9–11 minutes. Prepare glaze by melting butter with sugar and water, then add vanilla. Spoon glaze over warm cookies.

Notes

Do not overbake. Glaze cookies while warm for best absorption.
