fresh, canned, or frozen

shredded cheddar cheese

all-purpose flour

egg

milk

black pepper

–2 jalapeños
finely chopped

garlic powder

smoked paprika

baking powder
Oil for frying
Instructions
In a bowl, combine corn, cream cheese, cheddar cheese, flour, egg, milk, salt, and pepper.
Add jalapeños, garlic powder, paprika, and baking powder.
Mix until a thick batter forms.
Heat oil in a skillet over medium heat.
Drop spoonfuls of batter into hot oil.
Fry for 2–3 minutes per side until golden and crispy.
Remove and drain on paper towels.
Serve warm.
Notes
Drain corn well to avoid excess moisture.
Test oil temperature with one nugget first.
Adjust spice level by changing jalapeño amount.
