Jalapeño Corn Nuggets

Ingredients
  

  • 2 cups corn kernels fresh, canned, or frozen
  • 4 oz cream cheese softened
  • 1 cup shredded cheddar cheese
  • ½ cup all-purpose flour
  • 1 egg
  • ¼ cup milk
  • ½ tsp salt
  • ¼ tsp black pepper
  • 1 –2 jalapeños finely chopped
  • ½ tsp garlic powder
  • ½ tsp smoked paprika
  • ½ tsp baking powder
  • Oil for frying

Instructions
 

  • In a bowl, combine corn, cream cheese, cheddar cheese, flour, egg, milk, salt, and pepper.
  • Add jalapeños, garlic powder, paprika, and baking powder.
  • Mix until a thick batter forms.
  • Heat oil in a skillet over medium heat.
  • Drop spoonfuls of batter into hot oil.
  • Fry for 2–3 minutes per side until golden and crispy.
  • Remove and drain on paper towels.
  • Serve warm.

Notes

Drain corn well to avoid excess moisture.
Test oil temperature with one nugget first.
Adjust spice level by changing jalapeño amount.
