ricotta cheese

all-purpose flour

granulated sugar

unsalted butter
softened

baking powder

vanilla extract

–5 Italian plums
sliced

tbsp
sugar
for topping
Instructions
Preheat oven to 350°F and grease a round cake pan.
Cream butter and sugar together until smooth.
Add eggs one at a time, mixing well after each addition.
Mix in ricotta cheese and vanilla extract until smooth.
In a separate bowl, combine flour, baking powder, and salt.
Gradually add dry ingredients to wet mixture and mix until just combined.
Pour batter into prepared pan and spread evenly.
Arrange sliced plums on top and sprinkle with sugar.
Bake for 45–50 minutes until a toothpick inserted comes out clean.
Remove from oven and let cool before serving.
Notes
Use whole milk ricotta for best texture.
Do not overmix batter to keep cake soft.
Substitute plums with other fruits if desired.
