Homemade Pimento Cheese

Classic Southern pimento cheese made with sharp cheddar, cream cheese, and pimentos. Easy, creamy, and perfect for spreading.

Ingredients
  

  • 2 cups sharp cheddar cheese freshly grated
  • 4 ounces cream cheese softened
  • ½ cup mayonnaise
  • ¼ cup diced pimentos drained well
  • ½ teaspoon garlic powder
  • ½ teaspoon salt
  • ¼ teaspoon black pepper

Instructions
 

  • In a large mixing bowl, combine softened cream cheese and mayonnaise. Mix until smooth and creamy. Add freshly grated cheddar cheese and drained diced pimentos. Sprinkle in garlic powder, salt, and black pepper. Stir until evenly combined. Taste and adjust seasoning if needed. Refrigerate for at least 30 minutes before serving to allow flavors to blend.

Notes

Use freshly grated cheese for best texture and flavor. Drain pimentos thoroughly to prevent watery spread. Store in an airtight container in the refrigerator for up to 5 days. Stir before serving if separation occurs.
