Hearty Crock Pot Cowboy Soup

Ingredients
  

  • 1 lb ground beef
  • 1 medium onion chopped
  • 3 cloves garlic minced
  • 2 cups potatoes diced
  • 1 15 oz can kidney beans, drained
  • 1 15 oz can corn, drained
  • 1 14.5 oz can diced tomatoes
  • 1 15 oz can tomato sauce
  • 3 cups beef broth
  • 1 teaspoon chili powder
  • 1 teaspoon paprika
  • 1 teaspoon salt
  • ½ teaspoon black pepper

Instructions
 

  • In a skillet over medium heat, brown ground beef with chopped onion until fully cooked.
  • Add minced garlic and cook briefly, then drain excess fat.
  • Transfer the mixture to the crock pot.
  • Add potatoes, beans, corn, diced tomatoes, tomato sauce, and beef broth.
  • Stir in chili powder, paprika, salt, and black pepper.
  • Cover and cook on low for 6 to 7 hours or on high for 3 to 4 hours until potatoes are tender.
  • Stir, taste, and adjust seasoning if needed before serving.

Notes

Browning the beef adds more flavor.
Adjust broth amount for desired thickness.
Store leftovers in the refrigerator or freeze for later use.
