Healthy Street Corn Salad with Greek Yogurt

Healthy street corn salad with Greek yogurt, lime, and spices. Easy fresh side dish recipe.

Ingredients
  

  • 3 cups corn
  • ½ cup Greek yogurt
  • ½ cup cotija cheese crumbled
  • 2 tablespoons lime juice
  • 2 cloves garlic minced
  • 1 teaspoon chili powder
  • ½ teaspoon paprika
  • ½ teaspoon salt
  • ¼ teaspoon black pepper
  • 2 tablespoons fresh cilantro chopped

Instructions
 

  • Cook corn in a skillet until slightly charred.
  • Let corn cool slightly.
  • In a bowl, mix corn, Greek yogurt, lime juice, garlic, chili powder, paprika, salt, and pepper.
  • Stir until evenly coated.
  • Add cotija cheese and cilantro and mix gently.
  • Refrigerate for at least 30 minutes before serving.

Notes

Use plain Greek yogurt for best flavor.
Chill before serving for freshness.
Customize with additional ingredients if desired.
