Hawaiian Carrot Pineapple Cake

Hawaiian carrot pineapple cake with moist texture and cream cheese frosting. Easy dessert recipe.

Ingredients
  

  • 2 cups all-purpose flour
  • 1 teaspoon baking soda
  • 1 teaspoon baking powder
  • 1 teaspoon ground cinnamon
  • ½ teaspoon salt
  • 1 cup granulated sugar
  • ½ cup brown sugar
  • 3 large eggs
  • ¾ cup vegetable oil
  • 1 teaspoon vanilla extract
  • 1 cup crushed pineapple drained
  • 2 cups grated carrots
  • 8 oz cream cheese softened
  • ½ cup butter softened
  • 2 cups powdered sugar
  • 1 teaspoon vanilla extract

Instructions
 

  • Preheat oven to 350°F and grease a baking pan.
  • Mix flour, baking soda, baking powder, cinnamon, and salt.
  • Mix sugars, eggs, oil, and vanilla.
  • Combine wet and dry ingredients.
  • Fold in pineapple and carrots.
  • Pour into pan and bake 35 to 40 minutes.
  • Cool completely.
  • Mix frosting ingredients and spread over cake.
  • Serve and enjoy.

Notes

Do not overbake.
Drain pineapple well.
Use fresh carrots for best texture.
