brown sugar

large eggs

vegetable oil

vanilla extract

crushed pineapple
drained

cups
grated carrots

cream cheese
softened

cup
butter
softened

powdered sugar

teaspoon
vanilla extract
Instructions
Preheat oven to 350°F and grease a baking pan.
Mix flour, baking soda, baking powder, cinnamon, and salt.
Mix sugars, eggs, oil, and vanilla.
Combine wet and dry ingredients.
Fold in pineapple and carrots.
Pour into pan and bake 35 to 40 minutes.
Cool completely.
Mix frosting ingredients and spread over cake.
Serve and enjoy.
Notes
Do not overbake.
Drain pineapple well.
Use fresh carrots for best texture.
