Greek Yogurt Pasta Sauce

Creamy pasta sauce made with Greek yogurt, garlic, and Parmesan for a healthy alternative to Alfredo.

Ingredients
  

  • 12 ounces pasta
  • 1 cup plain Greek yogurt
  • 2 cloves garlic minced
  • 2 tablespoons olive oil
  • ½ cup grated Parmesan cheese
  • 1 teaspoon salt
  • ½ teaspoon black pepper
  • 1 tablespoon lemon juice
  • ½ cup reserved pasta water
  • 2 tablespoons chopped parsley or basil optional

Instructions
 

  • Cook pasta in salted boiling water until al dente. Reserve 1/2 cup pasta water before draining. Heat olive oil in a skillet and sauté garlic until fragrant. Reduce heat and stir in Greek yogurt. Gradually whisk in reserved pasta water to create a smooth sauce. Add Parmesan, lemon juice, salt, and pepper. Toss pasta with the sauce until evenly coated. Garnish with fresh herbs and serve.

Notes:
Use full-fat Greek yogurt for best texture. Stir gently to prevent curdling.
