Ingredients

plain Greek yogurt

granulated sugar or honey

vanilla extract

all-purpose flour

baking powder

chia seeds

tablespoons
vegetable oil or melted butter
Instructions
Preheat oven to 350°F and line a baking sheet with parchment paper.
In a bowl, mix Greek yogurt, sugar or honey, egg, vanilla extract, and oil until smooth.
In another bowl, combine flour, baking powder, salt, and chia seeds.
Gradually add dry ingredients to wet ingredients and mix until a soft dough forms.
Fold in optional add-ins if desired.
Scoop small portions of dough onto the baking sheet, spacing them slightly apart.
Bake for 10 to 12 minutes until edges are lightly golden.
Let cookies cool on the baking sheet for a few minutes before transferring.
Notes
Use thick Greek yogurt for best texture.
Do not overbake to keep cookies soft.
Add chocolate chips or nuts for variation.
