Greek Yogurt Chia Seed Cookies

Ingredients
  

  • ½ cup plain Greek yogurt
  • cup granulated sugar or honey
  • 1 large egg
  • 1 teaspoon vanilla extract
  • 1 cup all-purpose flour
  • 1 teaspoon baking powder
  • ¼ teaspoon salt
  • 2 tablespoons chia seeds
  • 2 tablespoons vegetable oil or melted butter

Instructions
 

  • Preheat oven to 350°F and line a baking sheet with parchment paper.
  • In a bowl, mix Greek yogurt, sugar or honey, egg, vanilla extract, and oil until smooth.
  • In another bowl, combine flour, baking powder, salt, and chia seeds.
  • Gradually add dry ingredients to wet ingredients and mix until a soft dough forms.
  • Fold in optional add-ins if desired.
  • Scoop small portions of dough onto the baking sheet, spacing them slightly apart.
  • Bake for 10 to 12 minutes until edges are lightly golden.
  • Let cookies cool on the baking sheet for a few minutes before transferring.

Notes

Use thick Greek yogurt for best texture.
Do not overbake to keep cookies soft.
Add chocolate chips or nuts for variation.
