plain Greek yogurt

Instructions
Preheat oven to 350°F and line a baking sheet with parchment paper.
In a large bowl, mix Greek yogurt, honey, egg, and vanilla extract until smooth.
In a separate bowl, whisk flour, baking powder, baking soda, cinnamon, salt, and chia seeds.
Add dry ingredients to wet ingredients and mix gently until combined.
Fold in rolled oats.
Let dough rest for 5–10 minutes to allow oats and chia seeds to absorb moisture.
Scoop dough onto baking sheet and flatten slightly.
Bake for 12–15 minutes until edges are set and tops are lightly golden.
Cool briefly on baking sheet, then transfer to a wire rack.
Notes
These cookies are soft by design. Letting the dough rest improves texture and structure.
