Greek Yogurt Chia Seed Cookies

Greek yogurt chia seed cookies made with oats, honey, and chia seeds. Soft breakfast cookies that are easy and nourishing.

Ingredients
  

  • 1 cup plain Greek yogurt
  • 1 ½ cups old-fashioned rolled oats
  • 1 cup all-purpose flour
  • 2 tablespoons chia seeds
  • cup honey or maple syrup
  • 1 large egg
  • 1 teaspoon baking powder
  • ½ teaspoon baking soda
  • 1 teaspoon cinnamon
  • 1 teaspoon vanilla extract
  • ¼ teaspoon salt

Instructions
 

  • Preheat oven to 350°F and line a baking sheet with parchment paper.
  • In a large bowl, mix Greek yogurt, honey, egg, and vanilla extract until smooth.
  • In a separate bowl, whisk flour, baking powder, baking soda, cinnamon, salt, and chia seeds.
  • Add dry ingredients to wet ingredients and mix gently until combined.
  • Fold in rolled oats.
  • Let dough rest for 5–10 minutes to allow oats and chia seeds to absorb moisture.
  • Scoop dough onto baking sheet and flatten slightly.
  • Bake for 12–15 minutes until edges are set and tops are lightly golden.
  • Cool briefly on baking sheet, then transfer to a wire rack.

Notes

These cookies are soft by design. Letting the dough rest improves texture and structure.
