Grated Egg Avocado Toast

Grated Egg Avocado Toast with fluffy grated egg, creamy avocado, everything bagel seasoning, and hot honey. A viral 10-minute breakfast.

Ingredients
  

  • 2 slices sourdough bread
  • 1 avocado
  • 2 eggs hard-boiled and peeled
  • 1 Tablespoon everything but the bagel seasoning
  • 1 Tablespoon Mike's Hot Honey
  • Salt to taste
  • Black pepper to taste
  • Red chili flakes to taste

Instructions
 

  • Toast the sourdough bread until golden and crisp.
  • Cut the avocado in half lengthwise, peel it, and remove the pit. Thinly slice each half and arrange the slices over the toast. Sprinkle with salt and pepper.
  • Using a Microplane grater, grate a chilled hard-boiled egg over the avocado on each toast.
  • Sprinkle half of the everything bagel seasoning over each toast, then drizzle with Mike's Hot Honey.
  • Finish with a sprinkle of red chili flakes and enjoy immediately.

Notes

Instant Pot 5-5 method for hard-boiled eggs: Add 1 cup water to the Instant Pot insert and set the trivet inside. Place the eggs on the trivet. Seal the lid and pressure cook for 5 minutes, then let the pressure release naturally for 5 minutes. Vent any remaining pressure, run cold water over the eggs for 2 minutes, and peel.
Chill the eggs before grating for the fluffiest, cleanest shreds.
No Microplane? A box grater or cheese grater works too.
Variations: Smash the avocado, turn it into quick guacamole, or add sliced tomatoes, microgreens, scallions, or chives.
Serve right away, since avocado is best the moment it's sliced.
