Golden Mini Lamb Pies with Feta, Caramelized Onions & Crispy Capers

Ingredients
  

  • 1 lb ground lamb
  • 2 sheets puff pastry
  • 1 large onion thinly sliced
  • ½ cup feta cheese crumbled
  • 2 cloves garlic minced
  • 2 tablespoons olive oil
  • 1 teaspoon salt
  • ½ teaspoon black pepper
  • 2 tablespoons fresh herbs thyme or parsley
  • 1 large egg for egg wash
  • ¼ cup capers drained
  • 1 tablespoon olive oil for capers

Instructions
 

  • Preheat oven to 400°F and line a baking sheet with parchment paper.
  • Heat olive oil in a skillet and cook onions until caramelized, about 10 to 15 minutes.
  • Add garlic and cook briefly, then add ground lamb and cook until browned.
  • Season with salt, pepper, and herbs, then let cool slightly.
  • Stir in crumbled feta cheese.
  • Roll out puff pastry and cut into small circles or squares.
  • Place filling in the center and fold or cover with another piece, sealing edges.
  • Brush tops with beaten egg.
  • Bake for 18 to 22 minutes until golden brown.
  • In a small pan, heat olive oil and fry capers for 2 to 3 minutes until crispy.
  • Drain capers and sprinkle over baked pies before serving.

Notes

Keep puff pastry cold before baking for best texture.
Do not overfill pies to prevent leaking.
Let filling cool before assembling to avoid soggy pastry.
