Ingredients
  

  • 1 block firm tofu, pressed and cubed
  • 1 cup cooked quinoa
  • 2 cups kale, stems removed and chopped
  • 1 cup cherry tomatoes, halved
  • 1 tbsp olive oil

Instructions
 

  • Preheat your oven to 400 degrees Fahrenheit.
  • Toss the cubed tofu lightly with the olive oil.
  • Bake the tofu on a parchment-lined tray for 20 minutes until golden brown.
  • Cook the quinoa according to package directions while the tofu bakes.
  • Massage the kale leaves in a large bowl until softened.
  • Divide the cooked quinoa into two bowls.
  • Top with massaged kale, cherry tomatoes, and the crispy baked tofu.

Notes

Press the tofu for at least 30 minutes to ensure it gets crispy in the oven. Massaging the kale is key to making the raw greens more digestible and palatable. You can add a squeeze of fresh lemon juice or herbs for extra flavor without extra calories.
