German Potato Pancakes (Kartoffelpuffer)

Ingredients
  

  • 2 pounds russet potatoes peeled
  • 1 small onion
  • 2 large eggs
  • 3 tablespoons all-purpose flour
  • 1 teaspoon salt
  • ½ teaspoon black pepper
  • Vegetable oil for frying

Instructions
 

  • Grate potatoes and onion. Squeeze out excess liquid. Transfer to a bowl. Add eggs, flour, salt, and pepper. Mix well. Heat oil in a skillet over medium heat. Spoon batter into pan and flatten. Fry until golden on both sides. Drain on paper towels and serve hot.

Notes

Serve with applesauce or sour cream. Adjust heat as needed.
