Instructions
Preheat oven to 400°F and line a baking sheet with parchment paper.
Toss potatoes with olive oil, salt, pepper, and half of the garlic.
Spread potatoes on the baking sheet.
Season chicken with salt, pepper, and optional spices.
Place chicken on the baking sheet with potatoes.
Roast for 35–40 minutes until chicken is cooked and potatoes are crispy.
Sprinkle Parmesan cheese and remaining garlic over chicken and potatoes.
Return to oven for 10 minutes until cheese melts and turns golden.
Remove from oven and let rest for a few minutes.
Garnish with parsley and lemon juice before serving.
Notes
Cut potatoes evenly for consistent cooking.
Avoid overcrowding the pan for crisp texture.
Use fresh Parmesan for best flavor.
