Ingredients

  • 2 pounds chicken wings split with tips removed
  • 1 tablespoon aluminum-free baking powder
  • 1 teaspoon salt
  • ½ teaspoon black pepper
  • 1 teaspoon garlic powder
  • ½ cup unsalted butter
  • 4 garlic cloves minced
  • ¾ cup freshly grated Parmesan cheese
  • 2 tablespoons fresh parsley chopped

Instructions

  • Preheat oven to 425°F. Line a baking sheet with foil and place a wire rack on top. Pat chicken wings completely dry with paper towels. In a large bowl, toss wings with baking powder, salt, black pepper, and garlic powder until evenly coated. Arrange wings in a single layer on the wire rack. Bake for 45–50 minutes, flipping halfway through, until golden and crispy. While wings bake, melt butter in a saucepan over medium-low heat. Add minced garlic and cook for 1 minute until fragrant but not browned. Remove from heat and stir in Parmesan cheese. Transfer baked wings to a large bowl and pour garlic butter mixture over them. Toss until evenly coated. Sprinkle with fresh parsley and serve immediately.

Notes

Dry wings thoroughly for maximum crispiness. Use baking powder, not baking soda. Toss wings in sauce after baking to maintain crispy skin. Store leftovers in the refrigerator for up to 3 days and reheat in the oven at 375°F for 10–12 minutes.
