Garlic Lemon Butter Seared Scallops

Ingredients
  

  • 1 lb sea scallops
  • 3 tablespoons unsalted butter
  • 1 tablespoon olive oil
  • 3 cloves garlic minced
  • 1 tablespoon lemon juice
  • ½ teaspoon salt
  • ¼ teaspoon black pepper
  • 1 tablespoon fresh parsley chopped

Instructions
 

  • Pat scallops dry with paper towels and season with salt and black pepper.
  • Heat olive oil in a skillet over medium-high heat.
  • Place scallops in the pan and cook for 2 to 3 minutes without moving until golden.
  • Flip scallops and cook for another 1 to 2 minutes.
  • Remove scallops from the pan and set aside.
  • Add butter and garlic to the same pan and cook briefly until fragrant.
  • Stir in lemon juice.
  • Return scallops to the pan and spoon sauce over them.
  • Sprinkle with parsley and serve immediately.

Notes

Dry scallops well to achieve a good sear.
Do not overcrowd the pan.
Serve immediately for best texture.
