Garlic Herb Roasted Veggies roasted in the oven with olive oil, garlic, and herbs for a simple side dish.

Ingredients
  

  • 6 cups mixed vegetables chopped
  • 3 tablespoons olive oil
  • 4 garlic cloves minced
  • 1 ½ teaspoons dried Italian seasoning
  • ¾ teaspoon salt
  • ½ teaspoon black pepper
  • 2 tablespoons fresh parsley or thyme optional

Instructions
 

  • Preheat oven to 425°F. Toss vegetables with olive oil, garlic, herbs, salt, and pepper. Spread in a single layer on baking sheet. Roast 25–30 minutes, stirring once, until tender and browned. Garnish and serve.

Notes
Do not overcrowd the pan. Use high heat for best caramelization.
