Garlic Herb Chicken with Mashed Potatoes and Glazed Carrots

Ingredients
  

  • 4 chicken breasts or thighs
  • 2 tablespoons olive oil
  • 4 tablespoons butter
  • 4 cloves garlic minced
  • 1 teaspoon fresh thyme
  • 2 tablespoons fresh parsley
  • 1 teaspoon salt
  • ½ teaspoon black pepper
  • 2 lbs potatoes peeled and cubed
  • 4 tablespoons butter
  • ½ cup milk
  • 1 teaspoon salt
  • ½ teaspoon black pepper
  • 2 cups carrots sliced
  • 2 tablespoons butter
  • 2 tablespoons honey
  • ¼ teaspoon salt

Instructions
 

  • Boil potatoes in salted water until tender, then drain.
  • Mash potatoes with butter, milk, salt, and pepper and set aside.
  • Cook carrots in butter, then add honey and salt and cook until glazed and tender.
  • Season chicken with garlic, herbs, salt, and pepper.
  • Heat olive oil in a pan and cook chicken until golden and fully cooked.
  • Add butter and spoon over chicken while cooking.
  • Let chicken rest briefly before serving.
  • Serve with mashed potatoes and glazed carrots.

Notes

Mash potatoes while warm for best texture.
Do not overcook chicken to keep it juicy.
Cook carrots until just tender for best flavor.
