Cook Time 10 minutes

Ingredients

  • 3 large firm green tomatoes
  • ½ cup all-purpose flour
  • ½ cup cornmeal
  • 2 large eggs
  • ¼ cup milk or buttermilk
  • 1 teaspoon salt
  • ½ teaspoon black pepper
  • ½ teaspoon paprika
  • 1 –2 cups vegetable oil for frying

Instructions

  • Slice green tomatoes into 1/4-inch thick rounds and season lightly with salt. Place flour in one shallow bowl. In a second bowl, whisk together eggs and milk. In a third bowl, combine cornmeal, salt, black pepper, and paprika. Dip each tomato slice into flour, then egg mixture, then cornmeal mixture, coating evenly. Heat vegetable oil in a skillet to 350°F. Fry tomato slices in batches for 2–3 minutes per side until golden brown. Transfer to a paper towel-lined plate to drain. Serve warm.

Notes

Use firm, unripe green tomatoes for best texture. Do not overcrowd the pan. Maintain steady oil temperature for even browning. Store leftovers in the refrigerator for up to 2 days and reheat in the oven at 375°F to restore crispness.
