Flavorful Ricotta Pasta alla Vodka

Flavorful ricotta pasta alla vodka made with creamy ricotta, tomato sauce, and Parmesan. A rich and easy pasta dish.

Ingredients
  

  • 12 oz pasta penne or rigatoni
  • 1 cup ricotta cheese
  • 1 can 14 oz crushed tomatoes
  • ½ cup heavy cream
  • ¼ cup vodka
  • ½ cup Parmesan cheese grated
  • 3 cloves garlic minced
  • 2 tablespoons olive oil
  • ¼ teaspoon red pepper flakes
  • ½ teaspoon salt
  • ½ teaspoon black pepper
  • 2 tablespoons fresh basil optional

Instructions
 

  • Cook pasta according to package instructions. Reserve 1/2 cup pasta water and drain.
  • Heat olive oil in a large skillet over medium heat.
  • Add minced garlic and red pepper flakes, cooking until fragrant.
  • Pour in vodka and simmer for 2–3 minutes.
  • Add crushed tomatoes and cook for about 10 minutes until slightly thickened.
  • Stir in heavy cream and ricotta cheese until smooth.
  • Add cooked pasta and mix well.
  • Add reserved pasta water as needed to loosen the sauce.
  • Stir in Parmesan cheese, salt, and black pepper.
  • Top with fresh basil and serve warm.

Notes

Use whole milk ricotta for a creamier texture.
Adjust red pepper flakes for spice preference.
Add chicken or shrimp for extra protein.
Reheat with a splash of cream or water to maintain smooth sauce.
