Ingredients

shredded mozzarella or Oaxaca cheese

mayonnaise

sour cream

cotija cheese
crumbled

lime juice

chili powder

cloves
garlic

teaspoon

fresh cilantro
chopped

oil or butter
Instructions
Heat oil in a skillet and cook corn until slightly charred.
In a bowl, mix corn with mayonnaise, sour cream, lime juice, garlic, chili powder, salt, and pepper.
Stir in cotija cheese and cilantro.
Heat a skillet and place a tortilla in the pan.
Add cheese, corn mixture, and more cheese.
Fold tortilla and cook until golden, about 2 to 3 minutes per side.
Repeat with remaining tortillas and serve warm.
Notes
Use fresh lime juice for best flavor.
Do not overfill quesadillas.
Customize with additional toppings if desired.
