Egg Roll in a Bowl

Quick and healthy egg roll in a bowl made with ground pork, cabbage, garlic, and soy sauce. Easy 20-minute skillet dinner.

Ingredients
  

  • 1 pound ground pork or turkey
  • 1 tablespoon olive oil or sesame oil
  • 3 garlic cloves minced
  • 1 teaspoon fresh ginger grated
  • 14 ounces coleslaw mix shredded cabbage and carrots
  • 3 tablespoons soy sauce
  • 1 tablespoon rice vinegar
  • 1 teaspoon sesame oil
  • ½ teaspoon salt
  • ¼ teaspoon black pepper
  • 2 tablespoons green onions sliced
  • ¼ teaspoon red pepper flakes optional

Instructions
 

  • Heat oil in a large skillet over medium heat. Add ground pork or turkey and cook until browned, breaking it apart as it cooks. Stir in garlic and ginger and cook for 30 seconds until fragrant. Add coleslaw mix and toss well. Cook for 5–7 minutes until cabbage softens but remains slightly crisp. Stir in soy sauce, rice vinegar, sesame oil, salt, and black pepper. Cook for 2–3 minutes until heated through. Remove from heat and garnish with green onions and red pepper flakes if desired. Serve warm.

Notes

Do not overcook cabbage to maintain texture. Drain excess grease if needed. Add sesame oil at the end for best flavor. Store leftovers in the refrigerator for up to 4 days and reheat gently in a skillet.
