Easy Spaghetti Salad (Mom’s BBQ Favorite)

Easy spaghetti salad made with Italian dressing, fresh vegetables, and cheese. A classic BBQ and potluck side dish.

Ingredients
  

  • 12 ounces spaghetti broken in half
  • 1 cup Italian dressing
  • 1 cup cherry tomatoes halved
  • 1 cup green bell pepper chopped
  • 1 cup red bell pepper chopped
  • ½ cup red onion finely chopped
  • ½ cup black olives sliced
  • 1 cup cucumber chopped
  • 1 cup shredded cheddar cheese
  • ¼ cup grated Parmesan cheese
  • 1 teaspoon Italian seasoning
  • ½ teaspoon salt
  • ¼ teaspoon black pepper

Instructions
 

  • Bring a large pot of salted water to a boil.
  • Cook spaghetti until al dente, then drain and rinse with cold water.
  • Allow spaghetti to drain well and transfer to a large bowl.
  • Add tomatoes, bell peppers, onion, olives, and cucumber.
  • Pour Italian dressing over the mixture and toss gently.
  • Add cheddar cheese, Parmesan cheese, Italian seasoning, salt, and black pepper.
  • Toss until evenly combined.
  • Cover and refrigerate for at least 1 hour before serving.
  • Stir before serving and add more dressing if needed.

Notes

This salad tastes better after resting. Refresh with extra dressing before serving if the pasta absorbs too much.
