Easy Sausage and Egg Casserole

Savory sausage and egg casserole baked with cheese and bread or hash browns. Perfect make-ahead breakfast for busy mornings.

Ingredients
  

  • 1 pound breakfast sausage pork or turkey
  • 8 large eggs
  • 2 cups milk
  • 2 cups shredded cheddar cheese
  • 4 cups bread cubes or frozen hash browns
  • 1 teaspoon salt
  • ½ teaspoon black pepper
  • ½ teaspoon garlic powder

Instructions
 

  • Preheat oven to 350°F and lightly grease a 9x13-inch baking dish. In a skillet over medium heat, cook sausage for 6–8 minutes until browned and fully cooked. Drain excess grease. Spread bread cubes or hash browns evenly in the baking dish. Layer cooked sausage evenly over the base. Sprinkle shredded cheddar cheese on top. In a large bowl, whisk together eggs, milk, salt, black pepper, and garlic powder. Pour egg mixture evenly over the casserole. Bake uncovered for 35–45 minutes until eggs are fully set and top is lightly golden. Let rest for 5–10 minutes before slicing and serving.

Notes

Drain sausage thoroughly to prevent excess grease. Avoid overbaking to maintain moisture. Store leftovers in the refrigerator for up to 4 days or freeze for up to 2 months. Reheat gently before serving.
