sharp cheddar cheese
cubed

pepper jack or Colby jack cheese
cubed

red wine vinegar

dried oregano

teaspoon
dried basil

red pepper flakes

black pepper

salami
sliced

dill pickles or cornichons
Instructions
In a bowl, whisk olive oil, red wine vinegar, garlic, oregano, basil, red pepper flakes, and black pepper.
Place cheese cubes in a large bowl or airtight container.
Pour marinade over cheese and toss gently to coat evenly.
Cover and refrigerate for at least 2 hours, preferably 12–24 hours, stirring once or twice.
Remove from refrigerator 20 minutes before serving.
Arrange marinated cheese on a platter with salami and pickles. Spoon extra marinade over cheese if desired.
Notes
Use firm cheeses only. Add salami and pickles just before serving for best texture.
