Easy Kabuli Rice (Afghani Pulao) Recipe

Fragrant Afghani Kabuli Pulao made with basmati rice, carrots, and spices.

Ingredients
  

  • 2 cups basmati rice
  • 4 cups water
  • 3 tablespoons vegetable oil or butter
  • 1 medium yellow onion sliced
  • 2 cups julienned carrots
  • ½ cup raisins
  • ¼ cup slivered almonds
  • 1 teaspoon cumin seeds
  • ¼ teaspoon ground cardamom
  • ¼ teaspoon ground cinnamon
  • teaspoons salt

Instructions
 

  • Rinse and soak rice. Cook onions and spices. Add rice and water and cook until tender. Sauté carrots, raisins, and almonds with spices. Top rice and steam briefly before serving.

Notes

Soak rice for best texture.
