Crispy Cheddar Corn Potato Fritters

Crispy Cheddar Corn Potato Fritters made with mashed potatoes, sweet corn, and sharp cheddar. Golden, cheesy, and easy to make.

Ingredients
  

  • 2 cups cold mashed potatoes
  • 1 cup canned sweet corn drained well
  • 1 cup sharp cheddar cheese freshly shredded
  • 1 large egg
  • ¼ cup all-purpose flour
  • 2 tablespoons green onions chopped
  • ½ teaspoon garlic powder
  • ½ teaspoon salt
  • ¼ teaspoon black pepper
  • 3 –4 tablespoons vegetable oil for frying

Instructions
 

  • Place the cold mashed potatoes in a large bowl and break up any lumps with a fork. Add the drained corn, shredded cheddar, green onions, garlic powder, salt, and black pepper. Stir until evenly combined. Crack in the egg and mix thoroughly. Add the flour and fold until the mixture holds together. Heat 2 tablespoons of vegetable oil in a skillet over medium heat. Scoop about 2 tablespoons of mixture and shape into a 1/2-inch thick patty. Place into the hot skillet without overcrowding. Cook for 3–4 minutes per side until golden brown and crispy. Add more oil as needed for additional batches. Transfer to a paper towel-lined plate before serving.

Notes

Drain the corn completely to prevent soggy fritters. Keep heat at medium for even browning. Store leftovers in the refrigerator for up to 3 days and reheat in a skillet or oven for best crispiness.
