Creamy Street Corn Dip

Creamy Street Corn Dip Recipe with roasted corn, cheese, lime, and bold seasoning for a perfect appetizer.

Ingredients
  

  • 4 cups corn kernels fresh, canned, or frozen
  • 8 oz cream cheese softened
  • ½ cup sour cream
  • cup mayonnaise
  • ½ cup crumbled cotija cheese
  • 2 tbsp butter
  • 2 cloves garlic minced
  • ½ tsp salt
  • ½ tsp black pepper
  • 2 tbsp lime juice
  • 1 tsp chili powder
  • ½ tsp smoked paprika
  • 2 tbsp chopped cilantro
  • 1 jalapeño chopped

Instructions
 

  • Melt butter in a skillet over medium heat.
  • Add corn and cook for 5–7 minutes until slightly roasted.
  • Add garlic and cook for 1 minute, then remove from heat.
  • In a bowl, mix cream cheese, sour cream, and mayonnaise until smooth.
  • Add cooked corn mixture to the bowl.
  • Stir in cotija cheese, lime juice, chili powder, paprika, salt, and pepper.
  • Mix until fully combined.
  • Transfer to a serving dish and garnish with cilantro and extra cheese.
  • Serve warm or chilled with chips.

Notes

Use fresh corn for best flavor.
Soften cream cheese before mixing.
Adjust spice level to taste.
