Instructions
Melt butter in a skillet over medium heat.
Add corn and cook for 5–7 minutes until slightly roasted.
Add garlic and cook for 1 minute, then remove from heat.
In a bowl, mix cream cheese, sour cream, and mayonnaise until smooth.
Add cooked corn mixture to the bowl.
Stir in cotija cheese, lime juice, chili powder, paprika, salt, and pepper.
Mix until fully combined.
Transfer to a serving dish and garnish with cilantro and extra cheese.
Serve warm or chilled with chips.
Notes
Use fresh corn for best flavor.
Soften cream cheese before mixing.
Adjust spice level to taste.
