Creamy Oven Baked Chicken Taquitos

Crispy oven baked chicken taquitos filled with creamy cheese and green chilies. Easy family-friendly dinner or appetizer.

Ingredients
  

  • 2 cups cooked shredded chicken
  • 4 ounces cream cheese softened
  • 1 cup shredded cheddar or Mexican blend cheese
  • 1 4-ounce can diced green chilies, drained
  • 1 tablespoon taco seasoning
  • ½ teaspoon garlic powder
  • ½ teaspoon salt
  • 12 small flour or corn tortillas
  • 1 –2 tablespoons olive oil or cooking spray

Instructions
 

  • Preheat oven to 425°F and line a baking sheet with parchment paper. In a large bowl, mix shredded chicken, cream cheese, shredded cheese, green chilies, taco seasoning, garlic powder, and salt until combined. Warm tortillas in the microwave for 20–30 seconds to make them pliable. Place 2–3 tablespoons of filling along one edge of each tortilla and roll tightly. Arrange seam-side down on the baking sheet. Brush lightly with olive oil or spray with cooking spray. Bake for 15–20 minutes until golden brown and crispy. Let cool for 5 minutes before serving.

Notes

Warm tortillas before rolling to prevent cracking. Do not overfill to ensure tight rolls. Store leftovers in the refrigerator for up to 4 days or freeze for up to 2 months. Reheat in the oven to maintain crispiness.
