Creamy Mushroom and Spinach Pasta

Ingredients
  

  • 250 g pasta
  • 250 g mushrooms sliced
  • 2 cups fresh spinach
  • 1 cup heavy cream
  • 2 cloves garlic minced
  • 2 tablespoons olive oil
  • ½ cup grated parmesan
  • Salt to taste
  • Black pepper to taste
  • ½ cup reserved pasta water

Instructions
 

  • Cook pasta in salted water until al dente. Reserve pasta water and drain. Heat olive oil in a pan. Add mushrooms and cook until golden. Add garlic and cook briefly. Pour in cream and simmer gently. Add pasta and pasta water as needed. Stir in spinach until wilted. Remove from heat and add parmesan. Season and serve.

Notes

Add pasta water gradually to control sauce thickness.
