Ingredients

  • 12 ounces salmon fillets skinless
  • 8 ounces pasta penne, fettuccine, or linguine
  • 2 tablespoons unsalted butter
  • 1 tablespoon olive oil
  • 4 cloves garlic minced
  • 1 cup heavy cream
  • ½ cup chicken broth
  • ½ cup freshly grated Parmesan cheese
  • 1 tablespoon lemon juice
  • 1 teaspoon Italian seasoning
  • ½ teaspoon salt
  • ½ teaspoon black pepper
  • Fresh parsley for garnish optional

Instructions

  • Bring a large pot of salted water to a boil and cook pasta until al dente. Reserve 1/2 cup pasta water, then drain.
  • Season salmon with salt and black pepper.
  • Heat olive oil and butter in a large skillet over medium heat.
  • Cook salmon for 3–4 minutes per side until just cooked through. Remove and set aside.
  • In the same skillet, add garlic and cook briefly until fragrant.
  • Pour in chicken broth and simmer for 1–2 minutes.
  • Add heavy cream, Italian seasoning, and lemon juice. Simmer gently until slightly thickened.
  • Reduce heat and stir in Parmesan cheese until melted and smooth.
  • Add cooked pasta and toss to coat, using reserved pasta water if needed.
  • Flake salmon into large pieces and gently fold into the pasta.
  • Garnish with parsley and serve immediately.

Notes

Cook salmon just until done to keep it tender. Reheat gently to avoid drying out the fish.
