Creamy Chicken Caesar Pasta Salad

Ingredients
  

  • 12 ounces rotini or penne pasta
  • 2 cups cooked chicken breast diced
  • 3 cups romaine lettuce chopped
  • 1 cup Caesar dressing
  • ½ cup freshly grated Parmesan cheese
  • 1 cup croutons lightly crushed
  • 1 tablespoon fresh lemon juice
  • ½ teaspoon garlic powder
  • ½ teaspoon black pepper

Instructions
 

  • Bring a large pot of salted water to a boil and cook pasta according to package directions until al dente. Drain and rinse under cold water, then let cool completely. In a large bowl, combine cooled pasta and diced chicken. In a small bowl, mix Caesar dressing with lemon juice, garlic powder, and black pepper. Pour dressing over pasta and chicken and toss until evenly coated. Gently fold in chopped romaine and grated Parmesan cheese. Just before serving, add crushed croutons and toss lightly. Serve chilled or slightly cool.

Notes

Allow pasta to cool fully before mixing with lettuce to prevent wilting. Add croutons right before serving to maintain crunch. Store in an airtight container in the refrigerator for up to 3 days. Stir in additional dressing if needed before serving.
