Cowboy Butter Lemon Bowtie Chicken

Cowboy Butter Lemon Bowtie Chicken with tender chicken, broccoli, and pasta tossed in a rich lemon butter sauce.

Ingredients
  

  • 12 oz bowtie pasta
  • 1 lb chicken breast cubed
  • 2 cups broccoli florets
  • 4 tablespoons butter
  • 4 cloves garlic minced
  • 2 tablespoons lemon juice
  • 1 teaspoon lemon zest
  • ½ cup chicken broth
  • ½ teaspoon red pepper flakes
  • ½ teaspoon paprika
  • 1 teaspoon salt
  • ½ teaspoon black pepper
  • 1 tablespoon olive oil
  • ½ cup Parmesan cheese

Instructions
 

  • Cook bowtie pasta according to package instructions and set aside.
  • Steam broccoli until tender-crisp and set aside.
  • Heat olive oil in a pan and cook chicken until golden and fully cooked, then remove.
  • In the same pan, melt butter and cook garlic until fragrant.
  • Add chicken broth, lemon juice, lemon zest, paprika, and red pepper flakes.
  • Simmer until slightly reduced.
  • Return chicken to the pan and mix well.
  • Add pasta and broccoli, tossing to coat evenly.
  • Sprinkle Parmesan cheese and mix gently.
  • Serve warm.

Notes

Do not overcook chicken to keep it tender.
Add pasta water if sauce becomes too thick.
Use fresh lemon for best flavor.
