Cowboy Butter Chicken and Rice

Cowboy Butter Chicken and Rice Recipe with buttery garlic sauce, tender chicken, and flavorful rice.

Ingredients
  

  • 1 lb boneless skinless chicken thighs or breasts
  • 1 cup long-grain white rice
  • 2 cups chicken broth
  • 4 tbsp butter
  • 1 tbsp olive oil
  • 4 cloves garlic minced
  • ½ cup chopped onion
  • 1 tsp salt
  • ½ tsp black pepper
  • 1 tsp paprika
  • 1 tbsp dried parsley
  • 1 tbsp lemon juice
  • ½ tsp red pepper flakes
  • 1 tsp Dijon mustard

Instructions
 

  • Heat olive oil and 2 tbsp butter in a large pot over medium heat.
  • Season chicken with salt, pepper, and paprika.
  • Cook chicken for 4–5 minutes per side until lightly browned, then remove and set aside.
  • In the same pot, cook onion and garlic until softened.
  • Add rice and stir to coat with butter and aromatics.
  • Pour in chicken broth and stir well.
  • Return chicken to the pot.
  • Add remaining butter, parsley, lemon juice, red pepper flakes, and Dijon mustard.
  • Cover and simmer on low for 18–20 minutes until rice is tender and chicken is cooked through.
  • Remove from heat, let rest for a few minutes, then serve.

Notes

Use long-grain rice for best texture.
Add broth when reheating to keep rice soft.
Adjust spice level based on preference.
