Ingredients

boneless skinless chicken thighs or breasts

long-grain white rice

chicken broth

garlic

chopped onion

paprika

dried parsley

lemon juice

red pepper flakes

Instructions
Heat olive oil and 2 tbsp butter in a large pot over medium heat.
Season chicken with salt, pepper, and paprika.
Cook chicken for 4–5 minutes per side until lightly browned, then remove and set aside.
In the same pot, cook onion and garlic until softened.
Add rice and stir to coat with butter and aromatics.
Pour in chicken broth and stir well.
Return chicken to the pot.
Add remaining butter, parsley, lemon juice, red pepper flakes, and Dijon mustard.
Cover and simmer on low for 18–20 minutes until rice is tender and chicken is cooked through.
Remove from heat, let rest for a few minutes, then serve.
Notes
Use long-grain rice for best texture.
Add broth when reheating to keep rice soft.
Adjust spice level based on preference.
