Classic Mexican Street Corn

Classic Mexican Street Corn Recipe with grilled corn, creamy sauce, cheese, and lime for authentic elote flavor.

Ingredients
  

  • 4 ears corn on the cob
  • cup mayonnaise
  • ½ cup crumbled cotija cheese
  • 2 tbsp lime juice
  • 1 tsp chili powder
  • 2 tbsp butter
  • ½ tsp salt
  • ½ tsp garlic powder
  • ½ tsp smoked paprika
  • 2 tbsp chopped cilantro
  • Hot sauce to taste

Instructions
 

  • Grill corn over medium heat for 10–12 minutes, turning until slightly charred.
  • Alternatively, boil corn for 5–7 minutes until tender.
  • Brush warm corn with butter.
  • Spread mayonnaise evenly over each ear of corn.
  • Sprinkle cotija cheese over the corn.
  • Drizzle lime juice on top.
  • Sprinkle chili powder, salt, and optional seasonings.
  • Add chopped cilantro and hot sauce if desired.
  • Serve immediately while warm.

Notes

Apply toppings while corn is warm for best results.
Use fresh lime juice for better flavor.
Substitute feta if cotija is unavailable.
