cream of tartar

unsalted butter
softened

granulated sugar

brown sugar

large egg

teaspoon
vanilla extract

granulated sugar
for coating

ground cinnamon
for coating
Instructions
Preheat oven to 350°F and line baking sheets with parchment paper.
Whisk flour, cocoa powder, baking soda, cream of tartar, and salt in a bowl.
In another bowl, beat butter, granulated sugar, and brown sugar until smooth.
Add egg and vanilla extract and mix well.
Gradually combine dry ingredients with wet ingredients to form dough.
Mix cinnamon and sugar in a separate bowl.
Scoop dough into balls and roll in cinnamon sugar.
Place on baking sheet with space between each cookie.
Bake for 10–11 minutes until edges are set.
Cool on baking sheet for 5 minutes before transferring.
Notes
Do not overbake to keep cookies soft.
Chill dough if it feels too soft.
Use proper measurements for best texture.
