shredded Monterey Jack cheese

shredded cheddar cheese

all-purpose flour

chili powder

ground cumin

Instructions
Brown beef and season. Drain. Layer chiles in dish. Add beef and cheese. Whisk eggs, milk, and flour. Pour over casserole. Bake at 350°F for 40–45 minutes. Rest before serving.
Notes
Drain chiles well to avoid excess moisture.
