Chile Relleno Casserole Recipe for Dinner

Easy chile relleno casserole baked with green chiles, beef, eggs, and cheese.

Ingredients
  

  • 1 pound ground beef
  • 2 cans whole green chiles 7 oz each
  • 6 large eggs
  • 1 cup whole milk
  • 2 cups shredded Monterey Jack cheese
  • 1 cup shredded cheddar cheese
  • ¼ cup all-purpose flour
  • 1 teaspoon chili powder
  • ½ teaspoon ground cumin
  • ½ teaspoon garlic powder
  • ½ teaspoon salt
  • ¼ teaspoon black pepper

Instructions
 

  • Brown beef and season. Drain. Layer chiles in dish. Add beef and cheese. Whisk eggs, milk, and flour. Pour over casserole. Bake at 350°F for 40–45 minutes. Rest before serving.

Notes

Drain chiles well to avoid excess moisture.
