Chickpea Feta Avocado Salad

Chickpea Feta Avocado Salad Recipe with fresh vegetables, creamy avocado, and a light lemon dressing.

Ingredients
  

  • 2 cups canned chickpeas drained and rinsed
  • 1 large avocado diced
  • ½ cup crumbled feta cheese
  • 1 cup cherry tomatoes halved
  • 1 cup chopped cucumber
  • ¼ cup finely chopped red onion
  • 3 tbsp olive oil
  • 2 tbsp lemon juice
  • 1 clove garlic minced
  • ½ tsp salt
  • ½ tsp black pepper

Instructions
 

  • Drain and rinse chickpeas thoroughly.
  • Dice avocado, halve cherry tomatoes, and chop cucumber and red onion.
  • Place all ingredients in a large bowl.
  • In a separate bowl, whisk together olive oil, lemon juice, garlic, salt, and pepper.
  • Pour dressing over salad and toss gently to combine.
  • Serve immediately or chill briefly before serving.

Notes

Add avocado just before serving to prevent browning.
Rinse chickpeas well for better flavor.
Customize with herbs or additional vegetables if desired.
