Preheat oven to 375°F. Slice chicken breasts into thin cutlets. Season with salt and pepper. Coat chicken in flour, dip in egg, then coat with breadcrumbs mixed with Parmesan and garlic powder. Heat olive oil in a skillet and fry chicken until golden, about 3–4 minutes per side. Place cooked chicken on a baking sheet, top with marinara sauce and mozzarella, and bake 5–7 minutes until cheese melts. Toast rolls, add chicken, garnish with basil, and serve.
Notes
Do not add sauce until after frying to keep chicken crispy. Use freshly grated Parmesan for best flavor.
