Chicken Caesar Pasta Salad

Chicken Caesar Pasta Salad with creamy dressing, grilled chicken, pasta, and crisp romaine. Perfect for potlucks or meal prep.

Ingredients
  

  • 12 ounces rotini or penne pasta
  • 2 cups cooked chicken breast diced
  • 3 cups romaine lettuce chopped
  • 1 cup Caesar dressing
  • ½ cup freshly grated Parmesan cheese
  • ½ teaspoon garlic powder
  • ½ teaspoon black pepper
  • 1 cup croutons
  • 1 tablespoon fresh lemon juice

Instructions
 

  • Bring a large pot of salted water to a boil and cook pasta according to package directions until al dente. Drain and rinse under cold water, then let cool completely. In a large bowl, combine cooled pasta and diced chicken. Add Caesar dressing, garlic powder, black pepper, and lemon juice. Toss until evenly coated. Fold in chopped romaine and grated Parmesan cheese gently. Just before serving, add croutons and toss lightly to maintain crunch. Taste and adjust seasoning if needed.

Notes

Add croutons right before serving to prevent sogginess. If the salad thickens in the refrigerator, stir in 1–2 tablespoons of additional dressing before serving. Store in an airtight container in the refrigerator for up to 3 days.
